THE WINES

In the winemaking process, we do not use any additives, we rack as little as possible and we do not clarify, the word LUNAR is very important to me. With the wines we make I TRY as far as possible to vinify each parcel separately, hence the blend is done in the vineyard and the fine-tuning in the cellar.

PRINCIPIA ORANGE 2020 LUNAR

This wine is made from the white grape Malvasía Castellana. It is fermented on its skin, hence the orange hue, the almond flower aromas on the nose, and the hint of peach in the mouth. These bush vines, grown on decomposing granite soil from 1910 to 1950, are southwest and northwest facing. We only use around 10 to 20 milligrams of free sulfur.

PRINCIPIA EL ESPINAR 2020 LUNAR

This still red wine comes from bush vines planted between 1950 and 1970. The variety, Tinta Madrid, is a descendent of Tempranillo but after so many years in this climate and on this soil it has transformed into something different. The winery allows us to ferment at low temperatures in concrete and stainless steel tanks, after which the wine goes into the barrel, where I like to leave it to do its thing with as little movement and as much tranquility as possible.

PRINCIPIA AURORAS 2020 LUNAR

The name belongs to my mother and grandmother, who helped me then and now. This orange wine from a north-facing vineyard gives it better acidity, the variety being Malvasía Castellana. The vineyard, planted in 1950, is partially terraced and surrounded by bushland comprised of rockroses, thyme, and many other plants and olives. The fermentation on skins for 22 days has given a structure and a color that represent the Malvasía grape and my land.

This still red wine, named after my beloved grandfather, is from the Tinta Madrid grape – as it is known in these parts – and other less well-known varieties which were planted thus to create their blends in the vineyard, amongst them Rufete, Bastardillo Chico, Bruñal, Garnacha… From different vineyards from 1910 to 1950, other harvesting times, and different yields depending on the vines’ age. The only intervention is the natural temperature of the cellar and the amount of extraction required.

PRINCIPIA BISABUELOS 2020 LUNAR

We are named after those who had the idea one hundred years ago to plant or graft what we today are enjoying. I have paid homage to them with a wine from the Juan García grape. Delicate and mercurial, it requires a lot of attention, but with a vintage such as this, it requires no presentation. The wine was made in concrete tanks and went into barrels before malolactic fermentation.
